A latent danger
One of the main concerns regarding cross contamination of food processing equipment is the typical accumulation of biofilms. Biofilms are layers of microorganisms bound tightly to a surface. Microbes can adhere to a surface and continue to grow, layer after layer, with the addition of new microbes. In this way, the new microbial layer provides nutrients and protection against disinfectants to the initial layers. These can continue to grow and become more resistant to disinfectants over time, making sanitation conditions more difficult if adequate sanitation is not achieved on a regular basis. These biofilms commonly appear in cracks and corners of food processing equipment, corners that are disinfected less regularly.
The American CDC, which we were citing at the beginning, estimates that each year 1 in 6 Americans (equivalent to 48 million people) acquires a disease that has been transmitted by food, 128,000 of them are hospitalized and about 3,000 they die.
